Irresistible seafood-filled crispy pastry pies for all to enjoy.
Ingredients:
  • 60g butter, chopped
  • 1 large leek, white part only, thinly sliced
  • 35g plain flour
  • 375ml milk
  • 42.00 gm lemon juice
  • 600g ocean trout, skinned, cut into 4cm cubes
  • 500g thick white boneless fish fillets, cut into 3cm cubes
  • 700g medium green prawns, peeled, deveined
  • 3 hard-boiled eggs, coarsely chopped
  • 125.00 ml flat-leaf parsley leaves, coarsely chopped
  • 6 sheets puff pastry
  • 1 egg, lightly beaten
Instructions:
  • In a saucepan, melt butter over gentle heat. Sauté leek for 8 minutes until very tender. Add flour and cook until bubbly. Off the heat, gradually pour in milk while stirring. Return to heat, stirring constantly until sauce thickens and boils. Take off heat and mix in lemon juice. Let it cool.
  • Preheat the oven to 200°C. Mix together seafood, egg, and parsley in the sauce, then season with salt and white pepper to taste. Divide the seafood mixture evenly into 6 ovenproof dishes, each with a 2-cup capacity.
  • Cut out 16cm rounds from each sheet of pastry using a small plate. Place each pastry round over a bowl and press the edges to secure. Brush with beaten egg, place dishes on 2 oven trays, and bake pies for 20 minutes, swapping trays halfway through until pastry is golden. Serve.
