Seafood platter recipe

Indulge in a delectable seafood platter brimming with fresh oysters, succulent prawns, and juicy lobster - a guaranteed hit for summer gatherings.
Ingredients:
  • 12 cooked king prawns
  • 12 oysters, in the shell
  • 80ml (1/3 cup) Japanese Dressing Sesame Soy Sauce
  • 1 lime, rind finely grated, juiced
  • 1 long fresh red chilli, finely chopped
  • 2 green shallots, finely chopped
  • Pink Himalayan salt, to serve
  • 12 scallops, roe removed, shells reserved
  • 40g herb and garlic butter (available from the seafood counter)
  • 185ml (3/4 cup) whole egg mayonnaise
  • 65g (1/4 cup) sour cream
  • 1 lemon, rind finely grated
  • 17.70 gm Dijon mustard
  • 40.00 ml finely chopped dill
Instructions:
  • Prepare the Japanese vinaigrette by mixing together the dressing, lime zest, 1 tablespoon of lime juice, chili, and shallot in a bowl. Then, transfer the flavorful mixture to a serving jug.
  • Place fresh oysters on a bed of delicate pink salt. Drizzle each oyster with the flavorful Japanese vinaigrette and offer the extra dressing on the side for dipping.
  • 1. Grease a frying pan lightly with oil and heat over medium-high heat. Cook scallops for 30 seconds to 1 minute per side until golden and cooked through. Serve in their shells.
  • Melt butter in pan for 2-3 minutes. Drizzle over scallops, then use any remaining to enhance lobster or oysters.
  • In a bowl, combine mayonnaise, sour cream, lemon zest, mustard, and dill. Whisk until smooth. Season to taste.
