Seafood skewers with lime hollandaise

Start your festive feast with delicious Christmas seafood skewers.
Ingredients:
  • 600g medium green prawns, peeled, deveined (tails intact)
  • 2 x 125g skinless salmon fillets, cut into 3cm pieces
  • 2 small limes, quartered
  • 1 tsp finely grated lime rind
  • 21.00 gm lime juice
  • 1/2 tsp whole black peppercorns
  • 2 egg yolks
  • 150g unsalted butter, melted
Instructions:
  • For the Lime hollandaise sauce, in a small saucepan over medium-high heat, combine lime rind, lime juice, peppercorns, and 2 tablespoons cold water. Bring to a boil, then reduce heat to medium and simmer uncovered until liquid is reduced to 1 tablespoon. Strain mixture through a fine sieve into a medium heatproof bowl and let it cool for 10 minutes. Whisk in egg yolks. Place the bowl over a saucepan of simmering water and whisk continuously for 2 to 3 minutes until thickened. Remove the bowl from heat and gradually whisk in melted butter until sauce is thick and creamy.
  • Skewer prawns and salmon, alternating between the two. Place a lime wedge at the end of each skewer. Season to taste.
  • Preheat a greased barbecue hot plate or chargrill over medium-high heat. Cook skewers for 2 to 3 minutes per side until prawns are pink and fully cooked. Serve with hollandaise sauce.
