Soy and lime calamari skewers

Try these tasty calamari skewers with zesty soy-lime dressing for a simple and impressive appetizer.
Ingredients:
  • 125.00 ml rice wine vinegar
  • 65.63 gm reduced-salt soy sauce
  • 42.00 gm lime juice
  • 10.00 gm caster sugar
  • 2 tsp sesame oil
  • 3cm piece ginger, peeled, finely grated
  • 2 green onions, thinly sliced
  • 550g calamari tubes, cleaned, cut into 1cm-thick rings
Instructions:
  • Submerge skewers in water for 30 minutes, then remove excess water.
  • Mix together vinegar, soy sauce, lime juice, sugar, oil, ginger, and onions until the sugar is fully dissolved.
  • Halve each calamari ring and thread onto skewers in a beautiful accordion-like pattern.
  • Preheat a barbecue plate on high heat. Coat skewers with oil and season with salt and pepper. Grill for 2 minutes, turning occasionally, until tender. Serve with soy and lime sauce.
