Hot and Sour Shrimp Soup

Elegant shrimp and pineapple noodle soup with zesty lime and soy sauce. Easy to make and bursting with flavor.
Ingredients:
  • 4 ounces thin egg noodles
  • 1 tablespoon vegetable oil
  • 0.5 cup sliced fresh mushrooms
  • 2 cloves garlic, chopped
  • 1 large tomato, cut into wedges
  • 1 cup fresh pineapple chunks
  • 1 stalk celery, sliced
  • 3 cups chicken broth
  • 3 cups water
  • 3 tablespoons fresh lime juice
  • 2 tablespoons soy sauce
  • 1 pound large shrimp, peeled and deveined
  • 0.125 teaspoon crushed red pepper
  • 0.5 cup bean sprouts
  • 1 green onion, thinly sliced
Instructions:
  • Bring a generously salted large pot of water to a boil. Cook pasta until al dente, about 8 to 10 minutes. Drain well.
  • In a large saucepan, heat oil over medium heat. Sauté mushrooms and garlic until soft but not browned. Add tomato, pineapple, celery, and sugar. Cook until tomatoes start to soften. Pour in chicken broth and water, bring to a boil. Reduce heat, add lime juice and soy sauce, simmer for 5 minutes. Introduce shrimp and red pepper, simmer for an additional 3 minutes until shrimp turn pink. Gently fold in bean sprouts, onion, and reserved noodles. Heat everything through and serve hot.
