Delicious Thai tom yum soup with shrimp, straw mushrooms, galangal, and Thai chilies for classic flavors.
Ingredients:
  • 1.5 pounds uncooked medium shrimp
  • 9.5 cups water, divided
  • 0.5 cup chopped galangal
  • 0.5 cup lemon grass, cut into 1-inch pieces
  • 6 kaffir lime leaves
  • 2 (15 ounce) cans whole straw mushrooms, drained
  • 2 tablespoons red curry paste (such as Thai Kitchen®)
  • 2 tablespoons fish sauce
  • 2 Thai chile peppers, sliced
  • 0.5 cup green onions, chopped
  • 0.5 cup fresh cilantro, chopped
  • 2 medium limes, juiced
Instructions:
  • Peel and devein shrimp, keeping the shells for later.
  • In a large saucepan, simmer shrimp shells with 6 cups water for 45 minutes. Then add galangal, lemongrass, and lime leaves; simmer for an additional 15 minutes.
  • Pass the flavorful broth mixture through a sieve into a bowl, separating out and discarding any solids.
  • Pour the broth mixture back into the pan and combine with the remaining 3 1/2 cups of water, mushrooms, curry paste, fish sauce, and chiles. Bring to a boil. Add shrimp, green onions, and cilantro, cooking until shrimp are bright pink and firm, approximately 5 minutes. Finish with a splash of fresh lime juice before serving.
