Seafood-Spinach Lasagna

Decadent white sauce complements tender scallops, crab, and shrimp perfectly.
Ingredients:
  • 9 uncooked lasagna noodles
  • 1 tablespoon butter or margarine
  • 10 oz bay scallops (about 1 cup), cut into bite-size pieces
  • 1 can (6 oz) cooked crabmeat (about 1 cup)
  • 6 oz cooked deveined peeled medium shrimp, tail shells removed (about 1 cup)
  • 1 large onion, chopped (1 cup)
  • 3 cloves garlic, finely chopped
  • 1 container (8 oz) cream cheese with chives and onion
  • 1 container (10 oz) refrigerated reduced-fat Alfredo pasta sauce
  • 1/3 cup dry white wine or chicken broth
  • 1 container (16 oz) ricotta cheese
  • 3 cups shredded Italian cheese blend (12 oz)
  • 1 box (9 oz) frozen spinach, thawed and squeezed dry
  • 1/4 cup chopped fresh basil leaves
  • 1 egg, slightly beaten
Instructions:
  • Preheat the oven to 350°F and generously coat a 13x9-inch (3-quart) baking dish with cooking spray. Follow package instructions to cook and drain noodles, ensuring you use the minimum recommended cooking time.
  • In a 10-inch skillet, melt butter over medium heat. Cook scallops for 2 minutes until firm and opaque, stirring constantly. Use a slotted spoon to transfer them to a medium bowl. Refrigerate the scallops along with the crabmeat and shrimp. In the same skillet, sauté onion and garlic for 4 to 5 minutes until the onion is softened. Reduce heat to low and stir in cream cheese until softened. Whisk in Alfredo sauce and wine, then remove from heat.
  • Combine ricotta cheese, 2 cups of cheese blend, spinach, basil, and egg in a medium bowl; let sit.
  • Start by evenly spreading 1/2 cup of the creamy cream cheese sauce in a baking dish. Follow with 3 noodles. Layer over half of the ricotta mixture (approximately 1 1/2 cups) and one-third of the seafood mixture (around 1 cup). Spread 2/3 cup of the luscious cream cheese sauce over this layer. Add another 3 noodles on top and layer with the remaining ricotta mixture, half of the remaining seafood mixture, and 2/3 cup of the irresistible cream cheese sauce. Finish by adding the remaining noodles, seafood, and cream cheese sauce on top. Enjoy!
  • Cover the dish with foil and bake for 40 minutes. Remove the foil, sprinkle the remaining 1 cup of cheese blend on top, and bake uncovered for an additional 10 minutes, or until the cheese is melted. Allow it to stand for 10 minutes before cutting.
