Elevate your chicken breasts with a flavorful apple-Dijon pan sauce that will make you feel like a culinary superstar.
Ingredients:
  • 4 tablespoons butter
  • 4 boneless skinless chicken breasts
  • 1 cup thinly sliced onion
  • 1 large red apple, cored and thinly sliced (about 2 cups)
  • 1 teaspoon Dijon mustard
  • 1 cup Progresso™ unsalted chicken broth (from 32-oz carton)
  • 1 package (5 oz) baby spinach
Instructions:
  • Preheat oven to 325°F and line a rimmed baking sheet with foil.
  • In a 12-inch skillet, melt 2 tablespoons of butter over medium-high heat. Pat the chicken dry, season with salt, and sear for 4 to 5 minutes until browned and easily releases from the pan. Flip and cook for an additional 2 minutes. Transfer to a baking sheet and bake for 12 to 14 minutes until the chicken reaches an internal temperature of at least 165°F.
  • In a skillet, melt the 2 tablespoons of butter and sauté the onion until translucent and just beginning to brown. Add the apple and cook for 1 to 2 minutes. Pour in the mustard and broth, then cook for 6 to 8 minutes until the mixture thickens. Finally, stir in the spinach until wilted.
  • Plate the sauce evenly on 4 plates and place a chicken breast on top of each.
