Succulent chicken breasts breaded, seared, and baked with cherry tomatoes, ricotta, and mozzarella for a delicious meal for two.
Ingredients:
  • 0.5 cup all-purpose flour
  • 1 large egg, beaten
  • 0.5 cup panko bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 (5 ounce) skinless, boneless chicken breast halves
  • salt and cracked ground black pepper to taste
  • 1 tablespoon vegetable oil, or more to taste
  • 0.25 cup cherry tomatoes, halved, or more to taste
  • 3 medium shallots, sliced
  • 0.25 teaspoon taco seasoning, or to taste
  • 2 tablespoons ricotta cheese, or to taste
  • 0.25 cup shredded mozzarella cheese, or to taste
  • 1 tablespoon olive oil, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a baking tray.
  • Prepare a breading station by setting up three bowls: one with flour, one with beaten egg, and one with a mixture of panko and Parmesan cheese.
  • Prepare the chicken breasts by butterflying them and seasoning with salt and pepper. Coat the chicken in flour, followed by beaten egg, and finish with a coating of panko mix.
  • In a hot pan, sear chicken in vegetable oil until golden and crispy, but not fully cooked, about 3 minutes per side. Transfer chicken to a baking tray.
  • If needed, drizzle extra oil into the pan. Toss in shallots and tomatoes, saute until tender (about 3 to 4 minutes), then season with salt, pepper, and taco seasoning. Take the pan off the heat.
  • Top the succulent chicken with the flavorful tomato mixture, followed by generous dollops of creamy ricotta and a sprinkle of gooey mozzarella. Finish off with a dash of salt and pepper, and a delightful drizzle of olive oil.
  • Roast in the preheated oven until chicken is fully cooked and the juices run clear, about 20 to 25 minutes. Check with an instant-read thermometer – it should register 165 degrees F (74 degrees C) in the center.
