Caramelized pear slices elevate juicy chicken, a hit with kids.
Ingredients:
  • 60ml (1/4 cup) maple syrup
  • 20.00 ml fresh rosemary, chopped
  • 1 garlic clove, crushed
  • 5.00 gm ground paprika
  • 2 (about 500g) chicken breast fillets, halved horizontally
  • 1 large Packham pear, cut into 1cm-thick slices
  • 20.00 ml white balsamic vinegar
  • 23.40 gm wholegrain mustard
  • 100g baby spinach leaves
Instructions:
  • Mix the maple syrup, rosemary, garlic, and paprika in a bowl. Coat the chicken with the mixture and let it marinate for 5 minutes. Drain the chicken, but keep the marinade.
  • 1. Heat oil in a large non-stick frying pan over medium-high heat. Cook half of the chicken for 2 minutes on each side until golden and cooked through. Place on a plate and cover to keep warm. Cook the remaining chicken similarly. 2. Add pear to the pan and cook for 3-4 minutes, turning occasionally until golden and tender. Transfer to another plate.
  • Pour the vinegar, mustard, and reserved marinade into the pan and bring to a boil over medium heat. Let it cook for 1 minute until the sauce slightly thickens. Serve by dividing the spinach, pear, and chicken onto plates and drizzle the sauce on top.
