Speedy smoky beans and toast

Easy and delicious brunch idea: Serve dish with a fried egg on top.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 250g chorizo
  • 1 large red onion, halved, thinly sliced
  • 1 large red capsicum, thinly sliced
  • 6.25 gm ground cumin
  • 3.75 gm sweet paprika
  • 1/4 tsp dried chilli flakes
  • 2 x 410g cans chopped tomatoes
  • 13.60 gm maple syrup
  • 400g can cannellini beans, rinsed, drained
  • 400g can butter beans, rinsed, drained
  • 100g (1 cup) mozzarella, coarsely grated
  • Bread, chargrilled, to serve
  • Fresh coriander leaves, to serve (optional)
Instructions:
  • 1. Heat oil in a large frying pan over medium heat. 2. Add chorizo and cook for 2 minutes until golden. 3. Add onion, capsicum, and garlic. Cook for 5 minutes until soft. 4. Stir in cumin, paprika, and chili and cook for 1 minute until aromatic. 5. Add tomatoes and maple syrup, season, and cook covered for 6 minutes. 6. Finally, add beans and cook uncovered for 2 minutes until warmed through.
  • 1. Preheat the oven grill to high heat. 2. Sprinkle the bean mixture with cheese and place it under the grill for 2-3 minutes, or until the cheese is melted and golden. 3. Serve the dish with bread and optionally top with coriander.
