Speedy smoky one-pot beef pasta

One-pot beef pasta: quick, easy, and less cleanup!
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, sliced
  • 10.00 gm smoked paprika
  • 10.00 gm ground cumin
  • 2 garlic cloves, crushed
  • 400g 3 Star Beef Mince
  • 1 green capsicum, seeded, cut into strips
  • 400g can diced Italian tomatoes
  • 375g jar mild chunky salsa
  • 500ml chicken stock
  • 300g angel hair pasta
  • 50g olive
  • 62.50 ml flat-leaf parsley leaves
  • Mixed salad leaves, to serve
Instructions:
  • In a large heavy-based saucepan over medium-high heat, heat the oil. Sauté the onion for 4 mins until just softened. Stir in paprika, cumin, and garlic for 30 secs until fragrant. Brown the mince for 5 mins, breaking up any lumps. Add capsicum, tomato, salsa, stock, and 1/2 cup (125ml) water. Season, bring to a boil.
  • Lower the heat to medium. Mix in the pasta gently. Cook, stirring occasionally, for 6-7 minutes or until the pasta is al dente. Garnish with olives and parsley. Enjoy with a side of salad leaves.
