Elevate your salmon pasta with zesty feta, lemon, broccoli, and grape tomatoes for a perfect meal.
Ingredients:
  • 8 ounces bow tie pasta
  • 2 (6 ounce) fillets fresh salmon
  • 0.5 teaspoon kosher salt
  • 4 cloves garlic, finely chopped
  • 1 pint grape tomatoes
  • 2 cups broccoli florets, cut into bite-size pieces
  • 0.5 cup chicken broth
  • 1 lemon, zested and juiced
  • 0.5 cup crumbled reduced-fat feta cheese
  • 2 tablespoons coarsely chopped fresh dill
  • 0.25 teaspoon red pepper flakes
Instructions:
  • Cook the pasta according to the instructions on the package.
  • Preheat a large saute pan over medium-high heat for 2-3 minutes. Add oil to the pan. Season the salmon with salt and cook for 1-2 minutes on each side, or until nicely browned.
  • Combine garlic, tomatoes, broccoli, and broth in the pan. Cook and stir for 3-4 minutes until the salmon flakes easily with a fork. Cut the salmon into bite-size pieces.
  • Combine the pasta with fresh lemon juice and zest, tangy feta cheese, fragrant dill, and a sprinkle of red pepper flakes. Toss everything together for a vibrant and flavorful dish. Serve it up and enjoy!
