Air fryer cod fillets with crispy seasoned topping. Serve as a flavorful main dish paired with rice and vegetables.
Ingredients:
  • avocado oil cooking spray
  • 0.33333334326744 cup unseasoned panko bread crumbs
  • 0.33333334326744 cup stone-ground yellow cornmeal
  • 2 teaspoons seasoning mix (such as Trader Joe's® 21 Seasoning Salute Blend)
  • 1 teaspoon paprika
  • 0.5 teaspoon salt, or to taste
  • 0.5 cup buttermilk
  • 3 (5 ounce) cod fillets
  • 1 tablespoon all-purpose flour
Instructions:
  • Line the bottom and sides of the basket-style air fryer with a foil sling extending about 3 inches up the sides. Make a few holes in the foil to align with the basket holes and coat it with avocado oil. Skip this step if using a shelf-style air fryer.
  • Heat the air fryer to 400°F (200°C).
  • In a small bowl, mix together panko crumbs, yellow cornmeal, seasoning blend, paprika, and salt. In a separate bowl, pour the buttermilk.
  • Dry cod fillets with paper towels, dust lightly with flour, dip in buttermilk, coat with crumb mixture, place on foil sling or air fryer rack, then spray with avocado oil.
  • Air fry the cod fillets until easily flaked, for 10 to 12 minutes. Use the sling provided to carefully remove the fillets and serve hot.
