Upgrade traditional rissoles with these healthy and flavorful chicken muffins. Packed with veggies and tangy sauces, they are perfect for a protein-rich snack or light meal. A must-try cooking hack for nutritious and delicious eating.
Ingredients:
  • 1 large zucchini, finely grated
  • 1 large carrot, peeled, finely grated
  • 500g lean chicken breast mince
  • 35g (½ cup) fresh wholemeal breadcrumbs
  • 2 green shallots, thinly sliced
  • 1 egg
  • 10.60 gm salt-reduced soy sauce
  • 1½ tbsp plum sauce
Instructions:
  • Preheat your oven to 190°C (170°C fan forced). Lightly spray 9 muffin pan holes (80ml each) with oil and line the bases with baking paper circles.
  • Squeeze out excess liquid from zucchini and carrot in a colander using your hands. Transfer them to a large bowl. Add chicken, breadcrumbs, shallot, egg, and soy sauce. Mix until well combined using your hands.
  • Evenly distribute the chicken mixture into the prepared holes. Bake for 15 minutes. Brush tops with plum sauce, then bake for an additional 5-10 minutes until golden and cooked through. Serve and enjoy!
