Secretly add healthy zucchini to delicious chocolate brownie bites.
Ingredients:
  • cooking spray
  • 6 tablespoons water
  • 2 tablespoons ground flax meal
  • 2 cups self-rising flour
  • 6 tablespoons unsweetened cocoa powder
  • 0.5 cup butter, softened
  • 1.5 cups white sugar
  • 1 teaspoon vanilla extract
  • 2.5 cups finely grated zucchini
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease 3 mini muffin pans with cooking spray.
  • Combine water and flax meal to form a gel for about 5 minutes. In a small bowl, mix flour and cocoa powder.
  • In a large bowl, use an electric mixer to cream together butter and sugar until smooth. Gradually add half of the flax mixture, beating well, then mix in the rest along with the vanilla extract. Slowly incorporate the flour mixture, then fold in the zucchini. Divide the batter into the muffin pans.
  • Bake until edges pull away from the sides of the pan, about 20 minutes in preheated oven. Cool on wire racks after removing from pans.
