Decadent zucchini brownies with luscious chocolate frosting for the ultimate indulgence.
Ingredients:
  • 1.5 cups white sugar
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1.5 teaspoons baking soda
  • 2 cups shredded zucchini
  • 0.5 cup chopped walnuts
  • 6 tablespoons unsweetened cocoa powder
  • 0.25 cup margarine
  • 2 cups confectioners' sugar
  • 0.25 cup milk
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), and prepare a 9x13-inch baking pan by greasing and flouring it.
  • In a large bowl, blend sugar, oil, and 2 teaspoons vanilla until combined. In a separate bowl, mix flour, 1/2 cup cocoa, baking soda, and salt, then stir into the sugar mixture. Fold in zucchini and walnuts before spreading the batter evenly in the prepared pan.
  • Bake in the oven until the top is dry and the edges are pulling away from the sides of the pan, this should take around 25 to 30 minutes. Cool for about 20 minutes before serving.
  • In the meantime, create the frosting by gently mixing 6 tablespoons of cocoa and margarine in a saucepan over medium-low heat until it turns smooth and glossy; then allow it to cool.
  • Mix together confectioners' sugar, milk, and 1/2 teaspoon vanilla until smooth, then fold into cooled cocoa mixture. Spread the frosting over the cooled brownies before slicing into squares.
