Decadent frosted zucchini brownies: moist, chocolaty nostalgia in every bite.
Ingredients:
  • 2 cups white sugar
  • 1.5 cups canola oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 cups grated zucchini
  • 1 cup chopped nuts
  • 6 tablespoons unsweetened cocoa powder
  • 0.25 cup melted butter
  • 2 cups confectioners' sugar
  • 0.25 cup milk
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease a rimmed baking sheet.
  • Combine sugar, oil, and eggs in a bowl. In a separate bowl, mix flour, cocoa powder, baking soda, cinnamon, and salt. Combine wet and dry ingredients, add vanilla, then gently fold in zucchini and nuts. Pour batter onto baking sheet.
  • Bake in the preheated oven for 25-30 minutes until fully cooked. Allow to cool completely for about 30 minutes.
  • While waiting, whip up the frosting: Combine cocoa powder with melted butter in a bowl, then blend in confectioners' sugar, milk, and vanilla until velvety smooth.
  • Gently smooth the frosting over the top of the cooled brownies.
