Secretly awesome chocolate cookies with hidden kale for extra moisture and health benefits.
Ingredients:
  • 0.75 cup all-purpose flour
  • 1.5 tablespoons unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 0.33333334326744 cup applesauce
  • 0.33333334326744 cup finely chopped kale
  • 0.33333334326744 cup white sugar
  • 1 tablespoon butter, softened
  • 2 tablespoons dark chocolate chips
  • 1 egg white
  • 1 teaspoon vanilla extract
  • 1 tablespoon canola oil
  • 1 teaspoon honey
Instructions:
  • Preheat the oven to a toasty 325 degrees F (165 degrees C) and line a baking sheet with parchment paper.
  • Combine flour, cocoa powder, and baking soda by whisking them together in a bowl until well mixed.
  • Combine the applesauce and kale in a blender and blend until smooth, for about 30 seconds.
  • With an electric mixer, smoothly blend sugar, butter, egg white, and vanilla in a bowl. Add kale mixture, canola oil, and honey. Gently combine flour mixture until just mixed, then fold in chocolate chips. Spoon cookie dough onto the baking sheet.
  • Bake in the preheated oven until edges are slightly hardened, about 10-12 minutes.
