Delicious sesame chicken with refreshing cucumber salad - on the table in just 20 minutes!
Ingredients:
  • 500g chicken tenderloins
  • 27.30 gm extra virgin olive oil
  • 2 Lebanese cucumbers, deseeded, finely chopped
  • 2 truss tomatoes, deseeded, finely chopped
  • 1/2 red onion, finely chopped
  • 1/2 bunch fresh continental parsley, leaves chopped
  • 2 x 250g pkt microwave brown rice, warmed
  • 4.50 gm sesame seeds, toasted
  • 40.00 ml tamari
  • 40.00 ml rice wine vinegar
Instructions:
  • For the sesame dressing, add all the ingredients to a jar, season, seal, and shake vigorously to combine.
  • In a small bowl, mix chicken with 1 tablespoon of dressing. Season to taste. Heat 2 teaspoons of oil in a large non-stick pan over medium-high heat. Sear chicken, turning occasionally, for 5 minutes until fully cooked. Place on a plate and cover to stay warm.
  • Next, mix together the cucumber, tomato, onion, parsley, 1 tablespoon of the reserved dressing, and the rest of the oil in a bowl. Season with desired seasonings.
  • Serve the rice and sesame chicken on individual plates, then add the chopped cucumber salad on top. Finish by drizzling the remaining dressing, sprinkling with toasted sesame seeds, and serving.
