Vibrant veggie noodle salad with zesty sesame ginger dressing.
Ingredients:
  • 10 ounces Chinese noodles (for making chow mein)
  • 1/3 cup soy sauce
  • 2 - 3 cups raw bite-sized broccoli florets (from about 1 head of broccoli)
  • Salt
  • 4 ouncemung bean sprouts (about 1 1/2 cups)
  • 3 green onions, thinly sliced white and green parts
  • 1 red bell pepper, cored and seeded, thinly sliced and cut into 1-inch long pieces
  • 1/4 large purple cabbage, cored and thinly sliced (about 2 cups)
  • 1 large carrot, peeled and slivered (just continue to peel with a peeler)
  • Dressing:*
  • 1-inch piece of fresh ginger, peeled and roughly chopped
  • 4 Tbsp white granulated sugar
  • 1 medium clove of garlic, roughly chopped
  • 1 teaspoon crushed red pepper flakes
  • 1/3 cup canola, rice bran, or vegetable oil
  • 1/3 cup unseasoned rice vinegar
  • 4 teaspoondark sesame oil
Instructions:
  • Prepare the noodles: Boil 4 quarts of water in a large pot. For Chinese noodles, skip salt. For soba or pasta noodles, add 1 tablespoon of salt. Cook noodles per package instructions; typically, Chinese noodles take about 5 minutes. Drain, rinse with cold water, then lay them on a sheet pan to dry.
  • Steam the broccoli: Fill a 3 to 4-quart pot with enough water to reach the steamer rack. Bring to a boil, add the broccoli florets, cover, and steam for 4 minutes. Drain and rinse with cold water to halt the cooking process. Set aside.
  • Coat cooked noodles in soy sauce: Transfer the noodles to a large serving bowl and evenly coat with soy sauce. Allow the noodles to absorb the flavors while preparing the dressing.
  • Prepare the dressing by combining ginger, sugar, garlic, and red pepper flakes in a mini chopper or food processor. Pulse until finely ground. Add vinegar and both oils, then pulse again until well blended.
  • Combine all the vegetables and dressing with the soy-sauce infused noodles, making sure everything is evenly coated. If preparing in advance, toss noodles with half of the dressing and soy sauce, and prep veggies. When ready to serve, mix in the remaining dressing and vegetables for a fresh finish.
