Whip up a quick and flavorful Thai stir-fry in just 25 minutes!
Ingredients:
  • 6 oz uncooked fettuccine
  • 2 tablespoons sesame oil
  • 1 package (14 oz) chicken breast tenders (not breaded), cut into 1-inch pieces
  • 2 medium bell peppers (any color), cut into thin strips
  • 1/4 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons water
  • 4 medium green onions, chopped (1/4 cup)
Instructions:
  • Prepare the fettuccine according to package instructions. Once cooked, give it a refreshing cold water rinse, then drain and set it aside.
  • In a 12-inch wok or nonstick skillet, heat oil over medium-high heat. Cook chicken for 3 to 4 minutes, stirring often, until no longer pink in the center. Add bell peppers and cook for an additional 3 to 4 minutes, stirring frequently, until crisp-tender. Then reduce heat to low.
  • Microwave peanut butter in a small bowl on High for 30 seconds to soften. Whisk in soy sauce and water until smooth.
  • Combine cooked fettuccine and the savory peanut sauce with the flavorful chicken and bell peppers in the skillet. Stir and heat until thoroughly warmed. Top off this delicious dish with a sprinkle of fresh onions for a final touch.
