Spicy Southwest seven-layer bean stack: Beans, picante sauce, cilantro, garlic, tomato, and tortillas baked to perfection in 40 minutes.
Ingredients:
  • 2 (15 ounce) cans pinto beans, drained and rinsed
  • 1 cup salsa, divided
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • 1 (15 ounce) can black beans, rinsed and drained
  • 0.5 cup chopped tomatoes
  • 7 (8 inch) flour tortillas
  • 2 cups shredded reduced-fat Cheddar cheese
  • 1 cup salsa
  • 0.5 cup sour cream
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Combine mashed pinto beans with 3/4 cup of salsa and minced garlic in a large bowl.
  • Combine 1/4 cup salsa with cilantro, black beans, and tomatoes in a separate bowl.
  • Start by laying 1 tortilla in a pie plate or tart dish. Spread 3/4 cup of pinto bean mixture over the tortilla, leaving a small border. Sprinkle 1/4 cup of cheese on top, then place another tortilla on top. Continue by spreading 2/3 cup of black bean mixture and 1/4 cup of cheese. Repeat this process twice more. Finish by covering with the last tortilla, then spreading the remaining pinto bean mixture and cheese on top.
  • Cover with foil and bake in a preheated oven for 40 minutes, then slice into wedges and serve with salsa and sour cream.
