Spicy tomato sauce with poached eggs - a flavorful North African breakfast staple.
Ingredients:
  • 3 tablespoons olive oil
  • 1.3333333730698 cups chopped onion
  • 1 cup thinly sliced bell peppers, any color
  • 2 cloves garlic, minced, or to taste
  • 2.5 cups chopped tomatoes
  • 1 hot chile pepper, seeded and finely chopped, or to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 4 large eggs
Instructions:
  • Prepare all ingredients.
  • In a skillet over medium heat, sauté onion, bell pepper, and garlic in olive oil until softened and onion is translucent, about 5 minutes.
  • Combine tomatoes, chile pepper, cumin, paprika, and salt in a mixing bowl.
  • Combine the tomato mixture with the onion mixture and simmer without a lid until the tomato juices have evaporated, approximately 10 minutes.
  • Create 4 wells in the tomato mixture; gently crack eggs into each well. Cover and cook until eggs are cooked to your desired firmness, approximately 5 minutes.
