Colorful and hearty dish of soft-cooked eggs with tomatoes and zucchini.
Ingredients:
  • 2 teaspoons vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 zucchini, chopped
  • 1 (10 ounce) can crushed tomatoes
  • 4 dashes hot pepper sauce (such as Tabasco®)
  • 4 eggs
  • 1 pinch salt
Instructions:
  • In a skillet over medium heat, sauté garlic and onion in vegetable oil until onion is soft and translucent, about 5 minutes. Add zucchini and cook for another 5 minutes. Stir in crushed tomatoes and hot pepper sauce, then cover and simmer for 10 minutes. Enjoy!
  • Create 4 wells in the tomato mixture, gently crack an egg into each well, keeping the yolks intact. Cover and cook until eggs reach desired softness, approximately 3 minutes. Carefully transfer the eggs from the skillet to a plate and serve alongside the flavorful tomato sauce.
