Spicy One-Pot Shakshouka

Spicy tomato sauce with poached eggs, a delicious Middle Eastern brunch favorite - Shakshouka.
Ingredients:
  • 1 onion, halved and finely chopped
  • 1 green bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 red chile pepper, seeded and finely chopped
  • 1 (14 ounce) can diced tomatoes
  • 1 teaspoon white sugar
  • 4 large eggs
  • 2 green onions, finely chopped
Instructions:
  • In a sturdy frying pan, heat olive oil. Cook onion and bell peppers with the hot oil for 2 to 3 minutes. Stir in chile pepper and garlic until the peppers start to caramelize, about 2 to 3 minutes. Add tomatoes and sugar, cooking over medium heat for 3 to 4 minutes. Season with salt and pepper.
  • Using a wooden spoon, create indentations in the sauce. Crack the eggs into the indentations. Cover and cook until the egg whites are firm and the yolks reach your desired doneness, about 5 to 8 minutes. Finally, uncover the dish and garnish with green onions.
