Spicy tomato baked eggs, a comforting meal anytime.
Ingredients:
  • 27.30 gm olive oil
  • 1 large red onion, thinly sliced
  • 1 large red capsicum, thinly sliced
  • 3 garlic cloves, crushed
  • 1.25 gm caster sugar
  • 2 x 400g cans Diced Tomatoes
  • 4 eggs
  • 5.00 gm sweet paprika
  • 5.00 gm ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp dried chilli flakes (optional)
Instructions:
  • In a non-stick frying pan over medium-low heat, warm the oil. Sauté the onion for 3 minutes until soft. Add the capsicum, garlic, and fresh chilli, and cook for 5 more minutes until soft. Sprinkle in the paprika, cumin, ground coriander, dried chilli flakes, and sugar, and cook for 1 minute until fragrant. Season to taste.
  • Place the tomato into the mixture. Cook and stir for 15 minutes or until slightly thickened. Take it off the heat, then gently create 4 evenly spaced wells using a spoon. Crack one egg into each well.
  • Simmer gently with lid on for 7-8 minutes until yolks reach desired consistency.
