Roasted sheet pan aloo gobi with potatoes, carrots, cauliflower, and peas for a delicious twist on the classic Indian dish.
Ingredients:
  • 0.5 cup vegetable oil
  • 2 tablespoons Madras curry powder, or to taste
  • 1 teaspoon sea salt
  • 3 large potatoes, cubed
  • 3 large carrots, chopped
  • 1 head cauliflower, cut into florets
  • 1 (10 ounce) package frozen peas
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect temperature to bake your delicious dish.
  • Combine the oil, curry powder, and salt in a small bowl.
  • Toss potatoes and carrots in a large bowl with 2/3 of the curry sauce until coated. Transfer to a large, rimmed baking sheet.
  • Bake the cauliflower in the preheated oven for 30 minutes. Then mix it with the remaining curry sauce, spread on the baking sheet, and bake for an additional 20 minutes. Finally, add the peas and bake for another 10 minutes. Garnish with cilantro before serving.
