Easy sheet pan pancakes with customizable toppings, perfect for busy mornings or meal prep. Just switch up the fruit and toppings for endless variations.
Ingredients:
  • 1 serving cooking spray
  • 3 cups baking mix
  • 2 cups milk
  • 0.25 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 1 cup blueberries
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then line a large sheet pan or jelly roll pan with parchment paper and spray it with cooking spray for easy cleanup.
  • Combine the baking mix, milk, eggs, vanilla extract, and cinnamon in a large mixing bowl. Spread the mixture onto the parchment paper-lined pan and evenly scatter the blueberries on top.
  • Bake until golden brown, about 15-18 minutes in the preheated oven.
  • Take the pan out of the oven, carefully transfer the pancake on parchment paper to a cutting board. Cut the pancake into squares using a pizza cutter or shapes with a cookie cutter.
