Sheet pan fajita mahi mahi with onions and bell peppers, a flavorful and effortless meal perfect for any night, served in tortillas or over rice.
Ingredients:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic salt
  • 0.125 teaspoon black pepper
  • 1 pinch cayenne pepper, or to taste
  • 2 medium bell peppers, sliced
  • 1 large white onion, sliced
  • 4 (4 ounce) mahi mahi fillets, cut into 1-inch slices
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), then cover a big baking sheet with parchment paper.
  • Combine a flavorful mixture of olive oil, lemon juice, chili powder, cumin, onion powder, garlic salt, black pepper, and cayenne in a bowl and mix well.
  • Evenly distribute bell peppers and onion on the prepared sheet pan. Drizzle half of the marinade over the vegetables and toss until they are thoroughly coated.
  • Roast the vegetables in the oven, preheated, for 10 minutes until tender.
  • While the vegetables are cooking, transfer the mahi mahi to a bowl and generously coat it with the remaining marinade. Allow it to marinate for 10 minutes.
  • Take out the vegetables from the oven and place the mahi mahi pieces on top. Put it back in the oven and bake until the fish is fully cooked and flakes easily with a fork, approximately 12 more minutes.
