Quick and easy sheet pan mahi mahi with vegetables for a delicious meal.
Ingredients:
  • 1 serving olive oil cooking spray
  • 1 (10 ounce) bag fresh green beans, trimmed
  • 1 teaspoon seasoned salt
  • 4 (4 ounce) fillets mahi mahi fillets
  • 2 tablespoons salted butter, melted
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 (10 ounce) can diced tomatoes and green chiles, drained
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously coat a large sheet pan with cooking spray.
  • Toss green beans with olive oil and seasoned salt until well coated. Spread evenly on one quarter of the sheet pan.
  • Place in the hot oven and bake for 10 minutes.
  • Pat dry the mahi mahi with a paper towel and then combine butter, lemon juice, and garlic in a small mixing bowl while the beans are baking.
  • Toss the green beans in the pan, then spray the empty side with oil. Add tomatoes and onion, toss to combine. Place the mahi mahi on top, brush with the lemon-garlic mixture, and season with salt and pepper.
  • Bake the fish until it easily flakes with a fork, typically around 25 minutes.
