Mahi mahi fillets with Thai coconut sauce: a quick and easy flavorful dish.
Ingredients:
  • 1.5 cups coconut milk
  • 4 tablespoons chopped fresh cilantro, divided
  • 4 tablespoons chopped green onions, divided
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 4 teaspoons minced fresh ginger root
  • 1 teaspoon fish sauce
  • 2 (6 ounce) mahi mahi fillets
Instructions:
  • Preheat a grill pan over medium heat.
  • Combine coconut milk, fresh cilantro, and green onions, along with zesty lime juice, garlic, ginger, and savory fish sauce in a saucepan; bring to a boil.
  • Coat mahi mahi fillets with sauce and grill until flaky, about 7 minutes per side.
  • Simmer the remaining sauce until slightly thickened for 3 to 4 minutes. Set aside and keep warm while the fish finishes cooking.
  • Place the fish on a serving platter and generously drizzle with the warm sauce. Finish by sprinkling the remaining cilantro and green onions over the top for a delightful presentation.
