Effortlessly roast flavorful Italian sausages with sweet bell peppers and onions on a single sheet pan for easy cleanup.
Ingredients:
  • 3 large bell peppers in assorted colors, cut into 1-inch chunks
  • 1 large red onion, cut into 1-inch chunks
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound uncooked sweet or hot Italian sausage
  • Fresh parsley or basil leaves for garnish, chopped (optional)
Instructions:
  • Preheat your oven to 425°F and position a rack in the middle.
  • Prepare the bell peppers and onions: Spread them on a baking sheet, drizzle with olive oil, sprinkle with salt and black pepper, and mix until well coated. Ensure they are evenly spread out on the pan.
  • Add the sausage: Crumble sausage, removing casings if using links, and scatter evenly among the vegetables.
  • Bake until vegetables are tender, sausage is cooked through, and lightly browned, stirring halfway through, 25-30 minutes. Serve garnished with parsley or basil, if desired.
