Sheet Pan Dinner with Sausage and Vegetables

Effortless sheet pan sausage and veggie dinner, customizable with your favorite pre-cooked sausage.
Ingredients:
  • cooking spray
  • 4 tablespoons olive oil, divided
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon kosher salt, or to taste, divided
  • 0.5 teaspoon freshly ground black pepper, divided, or more to taste
  • 1 (16 ounce) package red potatoes, cut into bite-sized chunks
  • 1 tablespoon dried onion flakes
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried oregano
  • 12 ounces fully cooked kielbasa or Polish sausage, cut into 1 1/2-inch pieces
  • 1 (12 ounce) bag fresh green beans, trimmed
  • 1 medium yellow bell pepper, cut into bite-sized strips
  • 1 medium onion, cut into bite-sized pieces
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) while lining a baking sheet with shiny aluminum foil and giving it a quick spritz of cooking spray.
  • In a large bowl, mix together 2 tablespoons of olive oil, rosemary, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper until evenly combined. Add the potatoes and toss until coated. Arrange the potatoes in a single layer, skin-side down, on the baking sheet.
  • Roast in the oven until potatoes are fork-tender, about 23-25 minutes. Remove and give them a good stir.
  • Combine the 2 tablespoons of olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, onion flakes, paprika, parsley, and oregano in the large bowl. Toss in the sausage, green beans, bell pepper, and onion until everything is evenly coated. Spread the sausage mixture over the potatoes on the baking sheet in a single layer.
  • Roast in the preheated oven for 20-25 minutes until vegetables are tender, tossing halfway through, until potatoes and sausage are golden brown.
