Ingredients:
  • 1 3/4 lb baby Yukon gold potatoes (about 20), cut in half lengthwise
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup butter, softened
  • 1 tablespoon finely chopped fresh Italian (flat-leaf) parsley
  • 1 teaspoon finely chopped fresh thyme leaves
  • 1 teaspoon finely chopped garlic
  • 1 lb asparagus, trimmed
  • 4 boneless beef New York strip steaks, 3/4 to 1 inch thick (about 2 lb total)
  • 4 teaspoons Montreal steak grill seasoning
Instructions:
  • Position one oven rack in the center and another rack 6 inches below the broiler.
  • Preheat the oven to 425°F and generously coat an 18x13-inch rimmed sheet pan with cooking spray.
  • Coat potatoes with 1 tablespoon of oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Arrange cut side down on a sheet pan. Bake in the center rack for 25 to 30 minutes until tender.
  • In a small bowl, combine butter, parsley, thyme, garlic, and remaining 1/4 teaspoon pepper. Set aside. In a shallow bowl, toss asparagus with remaining 1 tablespoon oil and remaining 1/4 teaspoon salt until well combined.
  • Take the sizzling hot pan out of the oven, gently place the crispy potatoes onto a lovely plate, and cover them up to maintain their warmth.
  • Preheat oven to broil setting.
  • Season the steaks with 1 teaspoon of grill seasoning, then place them on a sheet pan. Broil the steaks on the top rack for 5 minutes. Take the pan out of the oven, flip the steaks, and add the asparagus around them. Put the pan back on the top rack and broil for another 4 to 6 minutes until the steaks reach your desired doneness (135°F for medium) and the asparagus is tender. Turn off the oven.
  • Let the steaks rest on a cutting board for 5 minutes. While waiting, put the potatoes and asparagus back on the pan and return to the turned-off oven for 4 to 5 minutes until the potatoes are warm and the asparagus is tender.
  • Top each steak with a generous spoonful of the flavorful butter mixture before serving alongside potatoes and asparagus.
