Sherried Pork with Pine Nuts

Try this quick and delicious nutty pork and veggie skillet meal - ready in just 45 minutes!
Ingredients:
  • 1/2 lb boneless pork loin or leg, cut into thin bite-size pieces
  • 1 teaspoon cornstarch
  • 1 tablespoon reduced-sodium soy sauce
  • Dash white pepper
  • 2 tablespoons sherry, dry white wine or water
  • 1 tablespoon canola oil
  • 1 clove garlic, finely chopped
  • 1 medium onion, thinly sliced (1/2 cup)
  • 1/2 medium red bell pepper, thinly sliced (1/2 cup)
  • 1 medium stalk celery, diagonally sliced (1/2 cup)
  • 2 tablespoons reduced-sodium chicken broth
  • 2 tablespoons pine nuts, toasted
Instructions:
  • Combine pork with a teaspoon of cornstarch, soy sauce, and white pepper in a small glass or plastic bowl. Refrigerate and let marinate for 20 minutes.
  • Combine 1 teaspoon of cornstarch with sherry in a small bowl; set aside.
  • Preheat a 12-inch skillet over high heat until a few drops of water sizzle upon contact. Add oil and swirl to coat the skillet. Add pork and garlic and sauté for about 3 minutes, stirring often, until pork is cooked through.
  • Integrate onion, bell pepper, and celery into the mix and sauté for 2 minutes, stirring occasionally. Pour in broth and bring to a boil. Gradually stir in the cornstarch mixture and cook briefly until thickened. Toss in the nuts.
