Sherry, pineapple and mustard butter glazed ham

Sweet and succulent pineapple ham perfect for parties with delicious leftovers.
Ingredients:
  • 165.00 gm orange marmalade
  • 82.50 ml sweet apera (sherry)
  • 525.00 gm pine mango fruit drink
  • 46.80 gm wholegrain mustard
  • 60g butter
  • 7kg cooked leg ham
Instructions:
  • Preheat oven to 180C (160C fan-forced).
  • In a medium saucepan over medium-high heat, combine marmalade, apera, fruit drink, and mustard. Bring to a boil, then lower the heat to medium and simmer for 25 minutes until slightly thickened. Remove from heat, stir in butter, and let it stand for 10 minutes.
  • Trim the ham rind about 8cm from the shank using a sharp knife. Slide your thumb under the rind to detach it from the fat, then peel it off. Score the fat at 1cm intervals and wrap the shank end in foil.
  • 1. Grease a wire rack in a large roasting pan and place the ham on top. Add enough boiling water to the pan to come 2cm up the sides. Brush ham with 1/4 of the apera glaze. 2. Bake for 1 hour 20 minutes, basting with the remaining glaze every 20 minutes, until ham is golden and caramelized. 3. Remove foil from shank before serving. Enjoy!
