Chocolate trifle

Elegant chocolate liqueur trifles served in tall glasses.
Ingredients:
  • 437.50 gm cold water
  • 10.00 gm cocoa powder
  • 40g butter, chopped
  • 107.50 gm caster sugar
  • 10.00 gm cornflour
  • 4.40 gm vanilla extract
  • 40.00 ml sherry, liqueur or brandy (optional)
  • 300ml thickened cream
  • 18cm sponge cake, cut into cubes
  • 2 ripe pears, quartered, core removed and diced
  • 60g dark chocolate, shaved
Instructions:
  • In a small saucepan over low heat, mix together 1 cup of water, cocoa powder, butter, and caster sugar. Stir constantly for 3 to 4 minutes until the butter is melted and the mixture is smooth.
  • Mix the remaining water, cornflour, vanilla, and sherry together. Stir this mixture into the chocolate mixture. Increase the heat to medium and cook while stirring until the mixture boils and thickens. Take it off the heat and let it cool entirely.
  • In a medium bowl, whip cream until soft peaks form.
  • Spoon 1 to 2 tablespoons of chocolate custard into each of the 6 tall glasses. Layer with cream, sponge, and pears, repeating until glasses are full. Top with a dollop of cream, shaved chocolate, and serve.
