Espresso chocolate trifles

Indulge in a delicious coffee-infused chocolate treat with ease.
Ingredients:
  • 125ml (1/2 cup) fresh espresso coffee
  • 30.00 ml coffee liqueur (like Tia Maria or Kahlua)
  • 2 200g containers French Vanilla Light Fruche
  • 30g good-quality dark chocolate, grated
  • 1 plain sponge cake, (single, round 18cm) cut into 2cm cubes
  • 20.00 gm cocoa powder, sifted
  • 40.00 gm caster sugar
  • 7.50 gm cornflour
  • 250ml (1 cup) reduced-fat milk
Instructions:
  • Create a decadent chocolate sauce by mixing cocoa, sugar, and cornflour in a saucepan. Slowly blend in the milk with a wooden spoon. Cook on low heat until it thickens and boils. Transfer to a heatproof bowl, cover with plastic wrap, and cool for 1-2 hours before serving.
  • Mix the coffee and liqueur in a jug. Combine Fruche, sugar, and chocolate in a small bowl.
  • Place one-third of the sponge cubes evenly into six 325ml serving glasses. Gently brush the sponge cubes in each glass with one-third of the coffee mixture. Spoon a generous dessertspoonful of the Fruche mixture on top of each glass, then evenly distribute half of the chocolate sauce among the glasses.
  • Create another layer using sponge, soaking it in coffee mixture, spreading Frûche mixture, and drizzling chocolate sauce over it. Top with a final layer of sponge, more coffee mixture, and Frûche mixture. Use a small spatula to level the tops. Cover with plastic wrap and refrigerate for 2 hours.
