Quick and easy molasses pie with a decadent brown sugar crumble topping. Gooey and delicious, perfect with a scoop of vanilla ice cream.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup packed brown sugar
  • 2 tablespoons butter
  • 1 cup molasses
  • 1 egg
  • 0.75 cup cold water
  • 0.25 cup boiling water
  • 1 recipe pastry for a 9 inch single crust pie
Instructions:
  • Combine flour, brown sugar, and butter in a small bowl until texture resembles coarse cornmeal. Set aside 1/2 cup for topping.
  • Beat the egg in a separate bowl, then combine with molasses and cold water. Add the crumb mixture and mix thoroughly. Dissolve baking soda in hot water, then incorporate into the molasses mixture. Pour the filling into the pie crust and evenly sprinkle the reserved topping on top.
  • Bake at 375°F (190°C) for 35 minutes until golden brown.
