Elevate your chicken fajita casserole with convenient frozen veggies.
Ingredients:
  • 1 serving nonstick cooking spray
  • 2 (1 ounce) packages fajita seasoning mix
  • 3 pounds skinless, boneless chicken breast halves
  • 1 (1 pound) package frozen bell pepper and onion mix
  • 2 cups shredded mozzarella cheese
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a 9x13-inch baking dish with cooking spray.
  • Transfer the fajita seasoning to a shallow bowl. Rinse the chicken, pat dry with paper towels, then coat it with the seasoning. Place the seasoned chicken in the baking dish and top it with the frozen vegetables.
  • After baking for 45 minutes, take it out and generously sprinkle with mozzarella cheese. Bake it again until the cheese is bubbly and slightly browned, and the chicken is fully cooked, which should take about 10 more minutes. Use a thermometer to ensure the center reaches 165 degrees F (74 degrees C).
