Easy shredded chicken casserole made with leftover chicken, canned soup, stuffing mix, and frozen peas for a quick and delicious meal.
Ingredients:
  • 0.75 cup frozen peas
  • 1.5 cups shredded cooked chicken
  • 1 (10.75 ounce) can condensed cream of celery soup
  • 0.5 cup milk
  • 2 tablespoons chopped onion
  • 1.75 cups dry bread stuffing mix (such as Pepperidge Farm®)
  • 0.5 cup salted butter, melted
Instructions:
  • Heat up your oven to 425°F (220°C).
  • + Fill a medium saucepan with 3 cups of water and bring it to a boil. Add peas and cook for 2 to 3 minutes, stirring occasionally, until tender. Drain and transfer the peas to a large bowl.
  • Combine the chicken, condensed soup, milk, and onion with the peas, mixing everything together until well blended.
  • In a separate bowl, mix stuffing mix with melted butter. Spread 3/4 of the stuffing mixture into a 2-quart casserole dish. Next, pour chicken mixture over the stuffing and finish by sprinkling the remaining stuffing on top.
  • Bake covered in the preheated oven for about 20 minutes until heated through.
