Creamy poppy seed chicken casserole with tender shredded chicken, gooey Cheddar cheese, buttery cracker topping.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 1 sleeve buttery round crackers (such as Ritz®), crushed
  • 0.5 cup butter, melted
  • 1 teaspoon poppy seeds, or more if desired
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 2 cups shredded Cheddar cheese
Instructions:
  • In a large pot, immerse chicken breasts in water and bring to a high boil. Lower heat to medium, cover, and gently simmer until chicken is cooked through, around 20 minutes. Drain and shred the chicken using two forks.
  • Preheat the oven to 350°F (175°C), then combine crackers, melted butter, and poppy seeds in a large bowl until mixed well; set aside.
  • Combine the condensed soup and sour cream in a medium bowl. Transfer half of the mixture into a 9-inch square baking dish. Layer shredded chicken evenly on top; pour the rest of the soup mixture over the chicken. Sprinkle with Cheddar cheese and top with the cracker mixture.
  • Bake until the cheese is gooey and the sauce is bubbling, about 25-30 minutes in the preheated oven.
