Poppy seed chicken in a creamy sherry-infused sour cream sauce, topped with crunchy cracker crumbs and plenty of poppy seeds.
Ingredients:
  • 6 skinless, boneless chicken breast halves - diced
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 2 tablespoons dry sherry
  • salt and pepper to taste
  • 8 ounces buttery round crackers, crushed
  • 1.5 tablespoons poppy seeds
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch baking dish with cooking spray.
  • Spread the diced chicken breasts in the baking dish. Mix soup, sour cream, and sherry in a bowl, then pour over the chicken. Sprinkle with salt and pepper.
  • Combine crushed crackers and poppy seeds, then generously sprinkle over the chicken. Season with salt and pepper before drizzling with melted butter.
  • Bake in a preheated oven, covered, for 30 to 45 minutes. Uncover for the last 5 minutes. Allow to rest briefly before serving.
