Tender shredded chicken with red peppers, garlic, ripe tomatoes, and flavorful pesto mayo make delicious and easy sandwiches for any meal.
Ingredients:
  • 8 (6 ounce) chicken thighs
  • 1 (12 ounce) jar roasted red peppers, drained and chopped
  • 3 tablespoons bottled minced garlic
  • 0.5 cup mayonnaise
  • 1 tablespoon pesto
  • 6 (6 inch) hoagie rolls, split lengthwise
  • 2 large tomatoes, sliced
Instructions:
  • Layer the chicken in the base of a slow cooker and top with savory roasted red peppers and flavorful garlic cloves.
  • Slow cook until the chicken is fully cooked and the juices run clear, approximately 8 hours.
  • Combine mayonnaise and pesto in a small bowl and refrigerate while the chicken cooks.
  • Shred the chicken using 2 forks, then generously spoon the flavorful chicken and pepper mixture onto hoagie rolls using a slotted spoon.
  • Enjoy alongside a dollop of flavorful pesto mayonnaise and fresh sliced tomatoes.
