Tangy shrimp and avocado salad with honey cider dressing on greens.
Ingredients:
  • 0.25 cup ketchup
  • 0.25 cup raw honey
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons diced red onion
  • freshly ground black pepper to taste
  • 0.5 cup olive oil
  • 1 (8 ounce) package mixed salad greens
  • 1 avocado - peeled, pitted, and sliced
  • 1 grapefruit, peeled and sectioned
  • 10 cooked and peeled shrimp, or more to taste
  • 0.25 red onion, thinly sliced, or to taste
Instructions:
  • Combine mayonnaise, ketchup, honey, and vinegar in a bowl. Mix in diced red onion, salt, and pepper. Secure the bowl with a damp cloth underneath. Slowly pour in olive oil while whisking continuously. Taste and adjust seasonings as necessary.
  • Assemble colorful plates with a bed of mixed greens and arrange avocado slices in the center. Surround with grapefruit segments, top with shrimp, and drizzle with honey cider salad dressing. Garnish with red onion slices for an added pop of flavor.
