Shrimp and Artichoke Quiche

Indulge in a decadent shrimp and artichoke quiche with a cheesy Bisquick® crust - a savory French delight.
Ingredients:
  • 3/4 lb frozen cooked shrimp, thawed, coarsely chopped (1 1/2 cups)
  • 3 medium green onions, sliced (3 tablespoons)
  • 1 cup shredded Swiss cheese (4 oz)
  • 1 cup shredded Parmesan cheese (4 oz)
  • 1 cup Original Bisquick™ mix
  • 2 eggs
  • 1 cup milk
  • 1 1/2 teaspoons Cajun seasoning
  • 1 can (14 oz) Progresso™ artichoke hearts, drained, cut lengthwise in half
Instructions:
  • Preheat the oven to 400°F. Coat a 9-inch glass pie plate with cooking spray and arrange the shrimp and onions in it.
  • Mix the cheeses in a small bowl, then sprinkle 1 cup of the cheese mixture over the shrimp and onions. In a medium bowl, combine Bisquick mix, eggs, milk, and Cajun seasoning until blended. Pour the mixture evenly over the cheeses. Place artichoke heart halves, cut sides down, on top, and sprinkle with the remaining 1 cup of cheese mixture.
  • Bake for 30-35 minutes or until a knife inserted in the center comes out clean. Allow it to stand for 10 minutes before serving.
