Quick and vibrant shrimp and broccoli stir-fry packed with veggies - a simple and delicious family favorite.
Ingredients:
  • 1 cup reduced-sodium soy sauce
  • 0.5 cup low-sodium chicken broth
  • 2 tablespoons orange juice
  • 1 tablespoon fish sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger powder
  • 0.5 teaspoon Sriracha sauce, or to taste
  • 0.5 teaspoon sesame oil
  • 3 tablespoons peanut oil, or more as needed
  • 1 tablespoon thinly sliced garlic
  • 1 tablespoon thinly sliced ginger
  • 1 (12 ounce) bag broccoli - cut into florets, stems peeled and sliced 1/4 inch thick
  • 0.67 cup onion, cut into long slices
  • 0.67 cup red bell pepper, cut into long thin strips
  • 0.67 cup carrots, cut diagonally into thin slices
  • 0.67 cup fresh snow peas, trimmed
  • 1 pound large shrimp (21-25 per pound), peeled and deveined
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 cups cooked rice, or to taste
  • 2 teaspoons sesame seeds, or to taste
Instructions:
  • In a large jar with a lid, mix together soy sauce, chicken broth, orange juice, fish sauce, rice vinegar, garlic powder, ginger powder, Sriracha sauce, and sesame oil. Shake vigorously until the sauce is thoroughly combined. Let it sit for later use.
  • In a large non-stick skillet or wok over medium-high heat, heat peanut oil. Cook garlic and ginger, stirring, until lightly browned, for about 1 to 2 minutes. Remove from the oil using a slotted spoon and discard.
  • Sauté broccoli, onion, bell pepper, carrots, and snow peas in the seasoned oil, stirring swiftly, until vegetables are vibrant and al dente, about 3 to 4 minutes. Transfer to a plate and keep warm.
  • Place the shrimp in the sizzling skillet and sear them for 90 seconds. Flip the shrimp and cook until they turn bright pink on all sides, become opaque, and curl into a "C" shape, approximately 90 seconds more.
  • Return stir-fried vegetables to the skillet and drizzle with the flavorful sauce.
  • Combine cornstarch and water in a bowl, then stir into the sauce until smooth. Thicken the dish by bringing it to a boil while stirring constantly. Remove from heat when thickened.
  • Spoon the dish over a bed of steaming, fragrant rice, sprinkle with sesame seeds for a delightful finish.
