Shrimp and asparagus salad with zesty lemon mayo dressing.
Ingredients:
  • 2 tablespoons olive oil
  • 1 lb. asparagus spears, trimmed
  • 1 medium red bell pepper, cut into thin bite-sized strips
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup light mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon paprika
  • 1 garlic clove, minced
  • 8 oz. shelled deveined cooked medium shrimp, tails removed
  • 4 hard-cooked eggs, quartered
Instructions:
  • In a large skillet, heat oil over medium-high heat until sizzling. Add asparagus and bell pepper, season with salt and pepper, and cook for 6 to 8 minutes until asparagus is crisp-tender, stirring often. Let it cool for a bit before serving.
  • Combine creamy mayonnaise, freshly squeezed lemon juice, aromatic paprika, and zesty garlic in a small bowl, blending them together until well mixed.
  • For each salad plate, neatly lay out asparagus and bell pepper. Drizzle each salad with a dollop of the creamy mayo mixture. Finish by evenly distributing the shrimp and sliced hard-cooked eggs on top.
