Sweet and salty shrimp udon with broccoli in peanut sauce - ready in just 15 minutes.
Ingredients:
  • 0.25 cup peanut butter
  • 2 tablespoons light soy sauce
  • 2 tablespoons Chinese black vinegar
  • 1 tablespoon sesame oil
  • 10 ounces dried Japanese udon noodles
  • 20 uncooked large shrimp - peeled, deveined, tails left intact
  • 1 cup broccoli florets
  • 0.25 cup chopped roasted peanuts
Instructions:
  • Combine peanut butter, soy sauce, black vinegar, sugar, and sesame oil in a small bowl, stirring until the sauce is thoroughly mixed. Set aside.
  • 1. Boil a generous amount of water in a large pot. Add udon noodles and cook for 5 minutes. Introduce shrimp to the pot and cook until they turn pink and opaque, approximately 3 minutes. Turn off the heat, keeping the pot on the stove. Fold in broccoli, cover, and allow it to sit for 2 to 3 minutes.
  • Transfer the drained noodle mixture to a large serving bowl. Pour the sauce over the noodles and stir thoroughly to ensure an even coating. Garnish with peanuts before serving.
